1 1/2 oz Auchentoshan American Oak Scotch
3/4 oz apricot liqueur
3/4 oz lime juice
1/2 ounce rich (2: 1) simple syrup
4 lines of Angostura bitter
5 mint leaves
Mix the mint leaves carefully in a glass. Add the scotch, apricot liqueur, lime juice and plain syrup. Fill the glass with crushed ice and wrap it tightly. Stir gently with carbonated water using a bar spoon at the top. Garnish with the bitter and a sprig of mint.
