Eggplant and gorgonzola pizza
Let me tell you a story about this restaurant in Italy. The Osteria dell Agnolo is really nothing special except an Italian Osteria in Florence, one block from Piazza del Duomo, and though not unique, I do not know what that is. This little gem was part of the curriculum for my school and went at least twice a week. We knew the owners and waiters and made many liters of wine available for free. It was our place, and when I think of my time in Florence, I think of the Ponte Vecchio, the leather-outdoor markets and the long-relaxing food dell'Agnolo, who drinks wine and eats pizza with gorgonzola and melanzane.
If you have a bit of nostalgia, I decided to make this pizza at home. Not exactly the same, but man, that was close. This is probably the best pizza ever.
I started with the prepared pizza dough spread as thinly as possible on a baking tray and then distributed a small pizza sauce over the dough. In the meantime, cut the eggplants with a half-inch ring.
I spread some mozzarella over the sauce and then layered the eggplant over the cheese.
Next more cheese. I sprinkled some gorgonzola sprinkles over the eggplant and then covered it with more mozzarella cheese.
I seasoned the pizza with salt, pepper and some dried oregano and then put it in a very hot oven for about 13-15 minutes, until the cheese was brown and bubbly and the crust looked golden brown.
I sliced everything, served it with a few peppercakes and dug me in.
Words can not express how much I love this pizza, but I will do my best. The combination of eggplant with the spicy, salty Gorgonzola cheese is out of this world.
The e melanzane dell Agnolo Gorgonzola pizza was made on a thin crunchy crust with thin eggplant slices, but this rustic version in my own small meal was good enough. You know when to taste or smell something that reminds you of a particular point in your life, and it brings you right to that point? Well, this pizza did that.
A bite, and I'm sitting in the little osteria with tablecloths with red and white tiles (really), drink wine, have a nice chat and eat pizza. Any food that can make it perfect enough for me.
Here is the recipe! Eggplant and gorgonzola pizza
Your favorite pizza dough
1/4 cup pizza sauce (which is your favorite)
1 cup of minced mozzarella
1 eggplant, cut in 1/2 inch (or less) rings (can not be used at all depending on the size of your pizza)
1/2 cup crumbled gorgonzola
1/4 teaspoon dried oregano
Red pepper flakes for garnish (optional)
Preheat oven to 500 degrees. Spread the pizza dough as thin as possible on a baking tray. Spread the sauce evenly over the pizza dough.
Sprinkle about 1/4 cup of mozzarella over the sauce. Layer of eggplant in the cheese. Evenly sprinkle over the pizza Gorgonzola crumbles, mozzarella and the rest of the top.
Season with salt, pepper and dried oregano.
Bake for 13-15 minutes until the cheese is golden and bubbly and the crust is golden.
If desired, serve with red pepper.
